Ingredients

  • 2 cups Bisquick™ Original Pancake & Baking Mix 16 tbsp
  • 1 cup milk 8 tbsp
  • 2 tbsp vegetable oil
  • 2 eggs no conversion needed
  • Banana Topping
  • 1/2 cup butter 8 tbsp
  • 1/4 cup packed brown sugar 4 tbsp
  • 1 tbsp ground cinnamon
  • 1/2 tbsp ground nutmeg 1.5 tsp
  • 1/2 cup maple syrup 8 tbsp
  • 1/4 to 1/2 tbsp rum extract if desired (0.75 to 1.5 tsp)
  • 4 firm ripe medium bananas cut into 1/2-inch slices (no conversion needed)
  • 1/2 cup chopped toasted pecans or walnuts 8 tbsp

Instructions
 

  • Step 1 In a medium-sized bowl, begin by stirring together the Bisquick™ mix, milk, and eggs until everything is well blended and combined. Next, heat your griddle or skillet over medium heat or adjust it to 375°F. If necessary, lightly grease the griddle with vegetable oil or spray it with cooking spray before it heats up. For each pancake, use slightly less than 1/4 cup of batter. Cook until you see bubbles breaking on the surface of the pancake. Then, carefully turn it over and cook until it reaches a beautiful golden color. Serve immediately, or if you prefer, place the pancakes on a cookie sheet in a warm oven until you are ready to serve them.
  • Step 2 In a 10-inch nonstick skillet, combine the butter, brown sugar, cinnamon, nutmeg, maple syrup, and rum extract. Cook this mixture over medium-high heat for about 2 to 3 minutes, stirring constantly with a wooden spoon until the sugar dissolves completely and the mixture thickens to your liking.
  • Step 3 Once your mixture is well combined and bubbling away, reduce the heat to medium; then add the sliced bananas, gently spooning the luscious sauce over each banana piece. Allow them to cook for about 3 minutes or until the bananas become glossy and are thoroughly coated with the rich sauce.
  • Step 4 To serve these mouthwatering pancakes, place two pancakes on each individual plate. Spoon approximately 1/3 cup of the caramelized bananas and sauce over the top of the pancakes. For an extra touch of deliciousness and texture, garnish with chopped nuts. Serve immediately and enjoy every bite!
